基于顺应论的中式菜名英译研究

内容摘要

随着中国改革开放的不断深入,中外文化交流的深度和广度都达到了新的水平。饮食文化的交流在其中扮演了重要的角色。一方面,越来越多的外国朋友来到中国进行旅游和投资,他们必然不能错过品尝中国美食的大好机会；另一方面,数量众多的海外中餐馆将中国的传统美食和饮食文化带到了世界各地。在这种形势下,如何将林林总总、多姿多彩的中式菜名恰当地翻译成英文显得重要而紧迫。对于中式菜名的英译,一些学者从不同角度撰文发表了自己的见解,丰富了对这一领域的研究。但是,这些研究或强调中国文化特色的保留,或突出菜名英译的实用性和目的性,鲜见对这一领域的综观性研究。本研究以维索尔伦的顺应论为依据,尝试对中式菜名的英译进行综观性研究。顺应论强调使用语言的过程是一个基于语言内部和外部因素、在不同的意识程度下不断地作出语言选择的动态顺应过程。翻译行为可以被描述为译者在不同意识程度下适应交际活动的需要而不断进行语言选择的过程。顺应论对中式菜名的英译具有很强的指导性。本文对中式菜名的特点进行了归类和分析。然后作者将北京市人民政府外事办公室和北京市旅游局在2008年发布的《中文菜单英文译法》中的译例同作者收集到的30份高档中餐馆的英文菜单中的译例进行对比,归纳出目前中菜英译存在的深层次问题并对这些问题产生的原因进行了分析。针对这些问题及原因,作者从顺应论的角度尝试性地提出了中菜英译应当遵守的三条原则,即语言顺应、心理顺应和社会文化语境的动态顺应。同时,针对不同类型的中式菜名,作者提出了相应的翻译策略。
